It seems I’m all about the sweet potato at the moment. I can’t get enough of it. And neither can Marnie.
Full of vitamin A (great for immunity and glowing skin), oozing with antioxidants, packed with fibre – (twice as much as your normal white potatoes), and triple as tasty – what isn’t to love?
I cooked up a sweet potato and tuna medley yesterday. It was Marnie friendly (she’ll 11 months old on Sunday, can you believe it?), Matt friendly, time friendly, wallet friendly, and oh, so healthy.
The recipe: (if you can call it that, it’s more of a ‘chuck it on the plate in a pretty way’ type dish).
Feeds 2 adults and 1 little ‘un (ours is 11 months old).
2 large sweet potatoes
2 tins of sustainable tuna
1 small red onion
1 small pot of greek yogurt
Handful of small vine tomatoes
Small bag of spinach
Extra virgin olive oil
50 grams feta
Method:
Clean and prick potatoes and pop in the microwave for 8 minutes, then bake in the oven for 10-15 minutes @ 200c. Whilst these are baking, dice red onion and place tuna in a bowl.
For weaned babies: scrape sweet potato out of skin and place in a bowl. Sprinkle with red onion, and place a dollop of greek yogurt on top. Marnie loved it. (It was a little messy, but we’re at the ‘I can feed myself stage, look at that messy face…).
For the grown ups: Half the baked sweet potato, and place a half on each plate. Pile tuna on top of potato, sprinkle red onion over, with a dollop of greek yogurt. Make a spinach and tomato salad on the side and drizzle with olive oil, and scatter some feta. Season and Enjoy.
