Last week Lamb and Bears nursery informed us they were having a bake sale this week, raising money for breast cancer care. I do love a bit of baking, so yesterday, with the help of my nephew Indy, Lamb and I baked some cupcakes. I’ll be honest. I put in all of the hard work while the boys terrorised the house with silicone cupcake holders. That was much more fun then watching me whisk!
Cupcakes are pretty straight forward, but I still follow a recipe (just in case!) The recipe I use is from Sainsburys ‘Baking’ cookbook which I got for my birthday a couple of years ago. It’s a simple and easy recipe. A cupcake is a cupcake, right? No need for anything complicated. I popped to Aldi for my ingredients, and found these cute silicone cupcake holders in lots of different shapes. I grabbed some standard round ones, and some fun stars.
The Recipe
A classic cupcake is a favorite in our household, and I love finding different ways to decorate them. As we are baking to raise money for breast cancer care, it is, of course, essential I decorate them with something pink. Butter icing is my absolute fave. The more the better. So I added a huge dollop of pink butter icing to each cupcake, then decorated with pink and white mini marshmallows, silver edible balls, and mini chocolate chips.
Unfortunately the little ones lost interest pretty quickly and went off to watch Disney ‘Dinosaurs’. Typical. I can’t complain, I’m sure the clean up would have been much worse if I had given them both a spoon and a bowl of icing…
This wasn’t a problem. Once the cakes were finished, it gave me the opportunity to sit down and enjoy my very own ‘afternoon tea’ using my favourite teacup and saucer. Obviously I had to test the cakes before sending them to the nursery…
Peaceful moments like enjoying a warm cup of tea and homemade cupcakes are rare for new mums. So I cherish any opportunity I get to sit and relax at home with my very own ‘afternoon tea’.
